Sorghum Millets, known as Jowar in India, are one of the world's most important cereal grains, cultivated for thousands of years and a staple in many Indian states including Maharashtra, Karnataka, Madhya Pradesh, and Rajasthan. These large, round, ivory-coloured grains have a mild, sweet, and slightly earthy flavour with a firm texture that holds up well in cooking. Jowar is exceptionally nutritious—it provides approximately 10-12% plant-based protein, 6-8% dietary fiber, and is rich in iron, calcium, magnesium, phosphorus, potassium, and B-vitamins (especially niacin, thiamine, and riboflavin). It is also a good source of antioxidants, including phenolic compounds and tannins, which help reduce oxidative stress and inflammation in the body. Jowar has a low glycemic index, making it a superior grain for diabetes management, and its high fiber content promotes digestive health, satiety, and weight management. Traditionally, Jowar is ground into flour to make the iconic 'jowar roti' or 'bhakri'—rustic, nutritious flatbreads—as well as porridge, upma, and gluten-free baked goods.
