Our Masoor Dal comes from the fertile Indo-Gangetic plains, particularly from the states of Uttar Pradesh, Bihar, and West Bengal. The whole brown-skinned lentils are processed to remove the outer hull, revealing the bright orange-red split cotyledons that cook in just 15-20 minutes without any pre-soaking. When boiled, they break down into a smooth, creamy, golden-yellow puree with a mild, nutty, and slightly sweet flavour that is comforting and easy to digest. Masoor Dal is the star of the classic 'masoor dal' preparation, and is equally wonderful in soups, stews, khichdi, and as a base for vegetable or meat curries.
